New Jersey natives Cynthia and Michael Minni know a thing or two about bagels.
That’s why they’re champing at the bit to open the Marathon Bagel Co. the first week of December in the Bealls shopping plaza near mile marker 53 bayside.
Cynthia said the menu will include at least a dozen different bagel flavors and everything is made in-house.
Egg and bagel breakfast sandwiches will be on the menu along with coffee. High-protein choices are a specialty, she said, including protein bowls consisting of eggs and optional meat served in a bowl for those on the go or looking for a healthier, lower-carb option.
“Even our flour is high in protein,” said Cynthia. “We’re using the best products we can get our hands on.”
She and her husband co-owned a bagel shop in their central New Jersey hometown of Freehold Township for 15 years. Their proprietary recipe involves steam-injecting the bagels for 20 seconds with a state-of-the-art oven soon to be installed at the new store.
The space was gutted with a plan to make Marathon Bagel Co. clean and cozy, Cynthia said.
“We can’t wait to get in there. We want to be a community place where people won’t go broke to buy something for breakfast in the morning,” she said.
Specials will be offered on unique bagels like French toast, Oreo Overload and Fruity Pebbles-flavored bagels, along with specialty cream cheese flavors like strawberry or Nutella.
Michael is a former police officer, which was the inspiration behind offering discounts to members of the military and police force at the bagel shop, Cynthia said.
